I love a good coleslaw - hold the mayonnaise, please. I'm not a fan of mayo and would prefer it kept out of my food, with the exception of sandwiches.

Quinoa Tabbouleh

As spring slowly makes its appearance (we're so close to actual spring weather!), I start to crave for lighter meals.

I had a bunch of parsley in the fridge that needed to be used up and tabbouleh sprang into my mind. Instead of the traditional bulgur, I used quinoa as the grain, though I have also used couscous in the past.

I've never been a fan of raw onion because I found it to be too peppery. Recently, I learned the trick where if you soak your cut onion in cold water for 10 minutes, it tames the flavour and makes the onion crispier.

Roasted Butternut Squash, Lentil & Farro Salad with Pomegranate & Tahini Dressing


We're deep into root vegetables season and my go-to way to prepare them is to coat them in some olive oil, salt and pepper, and roast them in the oven. Toss the caramelized veggies with some quinoa and maple syrup vinaigrette, and you have a meal prepared in less than an hour.


To change it up a bit, I roasted some cubed butternut squash and, rather than quinoa, used farro and lentil to bulk up the meal.


I also used my newly purchased Turkish ingredients of tahini and pomegranate molasses to make a dressing. The pomegranate molasses was an impulse purchase, but I'm so glad I brought some back with me. The tahini is the best I've ever had, with a deep, intense sesame flavour.

Caprese Salad

Clinging on to the last vestige of summer:


Using the last tomatoes from my garden, I made a Caprese salad. No recipe needed (though Serious Eats has a guide on how not to screw it up): tomatoes, basil, mozzarella di bufala, olive oil, salt and pepper. Simple and delicious.
